The first thing we want to talk about is the Hyperwave Fluctuation Technology that the Excalibur Dehydrator uses. What this technology do is to fluctuate the temperature or allow the food to cool from time to time.
The idea behind the fluctuation temperature is to prevent the surface of the food from drying out due to constant exposure to heat. When the surface of the food becomes dry and hard, moisture gathers within its core without any means of escaping. This makes fruits or food semi-dry and prone to bacteria over time. Thanks to the Hyperwave Fluctuation Technology among Excalibur Dehydrators, any food you dry will not have a hard surface. It will make sure that the inside of a vegetable, fruit, or meat is completely dry.
Backing the Hyperwave heating tech is the Excalibur’s Parallex Horizontal Airflow. The dehydrator uses a fan to draw in air that passes through its heating element and distributes it across the different compartments. The Parallex Horizontal Airflow allows an even distribution of hot among the foods within the dehydrator.
Unfortunately, the seven-inch fan is also a noticeable shortcoming of the Excalibur Dehydrator. When the unit is turned on, the fan generators a significant amount of noise. While it is not loud enough to disturb anyone in the next room, the loud fan and motor may seem distracting to some people.

What we like about the Excalibur Dehydrator is its wide range of temperature of 105°F to 165°F. The lowest setting of 105°F is great for preserving vegetables and fruits while retaining various aspects of it. This includes the food’s nutrient, color, and aroma. Preserving foods at this temperature lets you create an in-depth flavor that you cannot achieve while the vegetable or fruit is raw. Temperatures of 110°F or higher can compromise the integrity of the vegetables and fruit, which will not make them appetizing after drying them.
On the other hand, 165°F is just right for making beef jerky. Dehydrators need to heat the beef above 160°F in order to kill any harmful microorganisms or bacteria lurking within the meat. High temperatures are why it is not safe to make jerky with other dehydrators that cannot reach the same temperature range as Excalibur’s unit. In addition, the Excalibur 3926TB has a 26-hour long dial timer that turns the dehydrator on. The lowest setting is up to two hours.

Overall, the Excalibur 3926TB exceeds our expectations when it comes to drying many pieces of fruit, vegetables, and meat. The two tech that the unit uses thoroughly gets rid of the moisture from large batches of food without creating a hardened surface that traps in moisture.
The only two flaw of the unit is the analog dial controls and the loud fan. Take note that the noise is the same as the kind generated by microwaves and other similar dehydrators. Otherwise, the performance of the Excalibur Dehydrator makes up for the lack of precision in controls and the noise it generates.
